Mini Cheesecakes
Mini Cheesecakes is an easy dinner. Made with 12 vanilla wafers, 2 (8 oz.) pkg. cream cheese, 1/2 c. sugar, 2 eggs and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Line muffin tin with foil cupcake liners.
Place one vanilla wafer in each liner.
Mix cream cheese, vanilla and sugar at medium speed on mixer until well blended; add eggs, mix well.
Pour into muffin cups over wafers, fill 3/4 full.
Bake 25 minutes at 325Β°. Chill.
Top with fruit, preserves if desired.
