Mini Cheese Blintzes
Mini Cheese Blintzes is an moderately easy dinner. Made with 1 (8 oz.) pkg. cream cheese, 2 egg yolks, 1/2 c. sugar, 1 loaf sliced white bread and 3/4 c. melted margarine, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Blend cream cheese, yolks, 1/2 cup sugar and 1 tablespoon lemon juice.
Remove crusts from bread.
Roll each slice thin with a rolling pin.
Spread about 1 tablespoon cheese mixture onto each slice of bread; roll up like a jellyroll.
Roll in melted butter and then cinnamon and sugar.
Cut roll in half.
Place on cookie sheet.
Bake at 350Β° for 10 to 12 minutes.
Makes about 95.
Can be prepared ahead of time and refrigerated or frozen until ready to bake.
