Mix and beat well sugar, oil and eggs.
Add dry ingredients and mix well.
Add carrots and nuts and mix well.
Bake in greased and floured 8-inch pans (2 thick layers or 3 thinner layers) or a 13 x 9-inch pan for 30 minutes at 350Β°.
(It only takes 3 to 4 good sized carrots to make 3 cups!)
