Mild Mexican Casserole
Mild Mexican Casserole is an moderately easy dinner. Made with 2 lb. lean ground meat, 1 or 2 onions, chopped, 1 or 2 jalapeños, chopped, 1 can pet evaporated milk (large) and 1 can enchilada sauce, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Brown the meat, onions and peppers.
Drain the fat.
Add the milk, enchilada sauce and 2 soups.
(It works better if you combine all this before you add it to the pan.)
In a Pyrex casserole, alternate the tortilla chips, meat mixture and a little cheese twice, ending with the bulk of the cheese on the top. Bake at 350° for 40 to 45 minutes.
