Mid-West Casserole
Mid-West Casserole is an impressive dinner. Made with 1/3 c. margarine, 1 c. shredded cabbage, 1 c. grated carrot, 1 c. grated raw potato and 1/4 c. finely chopped celery, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Melt margarine in saucepan.
Add cabbage, potato, celery, carrot, onion and parsley.
Cook over low heat 5 minutes.
In bowl, combine egg yolks and milk; blend in bread cubes, salt and pepper.
Gradually blend in vegetable mixture.
Fold in stiffly beaten egg whites.
Pour into well-greased 1 1/2-quart casserole. Bake at 350Β° for 45 minutes.
