Microwave Raisin Bran Muffins
Microwave Raisin Bran Muffins is an moderately easy dinner. Made with 1 egg, 1 1/4 c. all-purpose flour, 1 tsp. baking soda, 1 c. raisin bran cereal and 1/4 c. chopped nuts (optional), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In small mixing bowl, beat egg and buttermilk.
Mix in all other ingredients and stir well.
Spoon batter into 6 paper-lined custard cups or microproof muffin pan, filling about half full. Cook 6 muffins at a time on High (max power) 2 or 3 minutes, or until no longer doughy.
Repeat twice.
Yields 18 muffins. Cooking time
6 to 9 minutes.
