Microwave Peanut Brittle
Microwave Peanut Brittle is an moderately easy dinner. Made with 1 1/2 c. unsalted dry roasted peanuts, 1 c. sugar, 1/2 c. light corn syrup, 1 tbsp. margarine and 1 tsp. vanilla extract, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In a microwave-safe glass bowl mix first 3 ingredients together and cook on High for 7 to 9 minutes, until mixture bubbles and peanuts are brown.
Quickly stir in margarine and vanilla.
Cook on High for 2 to 3 minutes.
Add baking soda, stirring quickly until mixture is foamy.
Pour onto a greased cookie sheet.
Let cool for 15 minutes, until firm.
Break into pieces or cut.
Makes 1 1/4 pounds.
