Microwave Peanut Brittle
Microwave Peanut Brittle is an moderately easy dinner. Made with 1 c. raw peanuts, 1 c. sugar, 1/2 c. white corn syrup, 1/8 tsp. salt and 1 tsp. margarine, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In a 1 1/2-quart casserole dish; stir together peanuts, sugar, syrup and salt.
Cook 8 minutes on High in a microwave.
Stir well after 4 minutes.
Stir in margarine and vanilla.
Put in microwave 2 more minutes on High.
Add baking soda and quickly stir until light and foamy.
Pour immediately into a greased baking sheet. Spread thin.
Cool and break into pieces.
Store in a tight container.
Roasted peanuts may be substituted instead of raw, but must be added just before soda.
