Microwave Peanut Brittle
Microwave Peanut Brittle is an moderately easy dinner. Made with 2 c. sugar, 1 c. light corn syrup, 1/3 c. water, 1 (16 oz.) pkg. salted spanish peanuts and 1 tsp. butter or margarine, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Grease two
15 1/2 x 2-inch baking sheets.
Keep warm. Place sugar, in a 3 quart casserole. Cook in microwave on Full power for 8 to 10 minutes or until soft ball stage reached.

In peanuts.
Cook in microwave for 10 to 12 minutes or until hard crack is reached.
This stage, when dropped into water the syrup separates threads which are hard and brittle.
Stir in butter and baking soda.
Pour half of candy on each sheet, spreading to 1/4-inch thickness.
Break into pieces.
