Microwave Peanut Brittle
Microwave Peanut Brittle is an moderately easy dinner. Made with 1 c. granulated sugar, 1/2 c. white corn syrup, 1 c. roasted salted peanuts, 1 tsp. butter and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix sugar and syrup in 1 1/2-quart casserole dish.
Microwave on High for 4 minutes.
Stir in nuts; microwave on High for 3 to 5 minutes or until light brown.
Add butter and vanilla and mix well.
Microwave on High again for 1 to 2 minutes.
Peanuts will be lightly brown.
Add baking soda and stir until light and foamy. Pour mixture onto lightly greased cookie sheet.
Let cool 1/2 to 1 hour.
When cool, break into pieces.
