Microwave Chocolate Pie
Microwave Chocolate Pie is an moderately easy dinner. Made with 3 egg yolks, 1 c. sugar, 5 tbsp. cornstarch, 2 tbsp. cocoa and 2 c. milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Place egg yolks, sugar, cornstarch, cocoa and milk into blender.
Blend on high until mixed well.
Pour into microwave-safe mixing bowl.
Microwave for 2 minute increments.
Stir well with a whisk after each timing.
It will take 4 to 5 two-minute timings to get thick.
Don't over-thicken because as the pie cools, it will become firm.
Add butter and vanilla.
Pour mixture into a cooked pie shell.
As I am cooking the pie mixture, I cook the pie shell according to package directions.
Top with meringue and bake until lightly brown in 400Β° oven.
