Microwave Cashew Chicken
Microwave Cashew Chicken is an moderately easy dinner. Made with 1 lb. chicken breast, 3 tbsp. oil, garlic, finely chopped (to taste), 2 tbsp. soy sauce and 1 tbsp. cooking sherry (optional), this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Heat oil in 3-quart casserole on High for 2 to 3 minutes. Combine chicken, garlic, soy sauce, sherry, cornstarch and ginger. Put ingredients in oil and cook on High 4 to 5 minutes.
Stir twice during the 4 to 5 minutes.
Add green pepper (broccoli) and cashews.
Cook, covered with plastic wrap, on High 3 to 5 minutes or until chicken and vegetables are tender.
Stir and let stand 3 minutes before serving.
Serve with favorite brand of rice.
