Microwave Caramel Corn
Microwave Caramel Corn is an moderately easy dinner. Made with 4 qt. popped corn, 1/2 c. butter (1 stick), 1 c. brown sugar, 1/4 c. light karo syrup and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Place popped corn in large grocery sack (regular weight paper, not too thin).
In a microwave bowl, mix together butter, sugar, syrup and salt.
Cook in microwave on High for 4 minutes, stirring twice.
Next add vanilla and baking soda.
Stir until foamy.
Pour mixture over the popped corn in the sack.
Shake to mix.
Cook in microwave 1 1/2 minutes and shake; cook in microwave 1 minute and shake; cook in microwave 1/2 minute and shake.
Spread on wax paper lined cookie sheet.
Spread evenly with a wooden spoon.
Let cool and store in an airtight container.
(Tin cans work well.)
