Mexican Turkey Casserole
Mexican Turkey Casserole is an moderately easy dinner. Made with 2 pt. cooked turkey, drain and reserve broth, 1 (10 1/2 oz.) pkg. tortillas, 2 c. each diced onion and bell pepper, saute and set aside, 1 (10 3/4 oz.) can each 99% fat free cream of chicken and cream of mushroom soup and 10 oz. can ro-tel tomatoes, this recipe delivers authentic, satisfying flavors. Place tortilla chips in 12 x 15 x 2-inch Pam sprayed pan. Crush chips slightly.
Add cut up turkey.
Blend 1 cup broth and remaining ingredients (except cheese) and pour over turkey.
Top with cheese.
Cover with foil and bake in 350° oven about 45 to 50 minutes.
