Mexican Rice and Bean Pie
Mexican Rice And Bean Pie is an moderately easy dinner. Made with 2 c. pinto beans, 1 to 2 tsp. cumin, 1 c. cottage cheese, 1 1/2 c. cooked brown rice and 1/2 c. finely chopped onion, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Warm pinto beans slowly with cumin, stirring occasionally. Mix rice with onion, jalapeño peppers and beaten egg.
Use back of a spoon to spread rice mixture into a 9-inch pan to make a "crust".
Spread cottage cheese over bottom of crust.
Drain pinto beans and add this as next layer.
Bake 20 minutes at 325°. Remove from oven and sprinkle cheese on top.
Return to oven for another 20 minutes.
Let stand 10 minutes.
Serves 4 to 6.
