Mexican Rice
Mexican Rice is an moderately easy Mexican dinner you can prepare in about 1 hour 4 minutes. Made with c. chopped onion, c. diced carrot, garlic, minced, . oil and c. long grain rice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In medium saucepan, saute onion, carrot and garlic in oil for 3 minutes.
Add rice; cook and stir 1 minute.
Stir in water, picante sauce and diced tomatoes and green chilies.
Cover; reduce heat to low.
Simmer for 20 to 25 minutes, or until all liquid is absorbed and rice is tender.
Let stand, covered, for 5 minutes. Serves 4.
