Mexican Rice
Mexican Rice is an moderately easy dinner. Made with 2 c. uncooked rice, 1/4 tsp. garlic salt, 1 tsp. salt, 2 c. water and 1/2 diced carrots, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Brown rice in oil until a nutty brown.
Add onion; saute until clear.
Add tomatoes (tomatoes should be chopped up to desired bite size), water, bouillon cube, garlic salt, carrots and peas.
Bring to a boil.
Reduce heat to simmer.
Cook until rice is tender and water is cooked out.
If necessary, add more water and let simmer dry again to get rice tender.
Once you bring rice to boil, never, never stir any more!!
If you do, you will have sticky rice.
