Mexican Quiche
Mexican Quiche is an moderately easy dinner. Made with 1 (9-inch) pie shell, 1 1/2 c. monterey jack cheese, 1 (20 oz.) can refried beans, 1/2 lb. summer or italian sausage and 2 eggs, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Preheat oven to 325Β°.
Sprinkle cheese over bottom of crust. Top with refried beans and sausage cut into small bits.
Combine half and half and egg in small bowl.
Whip eggs slightly.
Add green chilies and onion and stir again.
Pour this mixture over other layered ingredients in pie pan.
Bake 1 hour or until mixture is firm.
Optional
May add avocados, tomatoes and sour cream to top if desired.
