Mexican Pie
Mexican Pie is an moderately easy dinner. Made with 2 c. mashed potatoes, 1 egg, slightly beaten, 1/4 c. sliced green onions, 1 lb. ground beef and 1 medium onion, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Heat oven to 425Β°.
Grease pie plate.
Stir egg and green onions into mashed potatoes and press into pie plate evenly across and up sides.
Bake 20 to 25 minutes, until light brown.
Cook beef and drain.
Stir in remaining ingredients, except cheese. Cover and cook over low heat 5 minutes, stirring occasionally. Spoon into potato shell and sprinkle with cheese.
Bake 2 to 3 minutes more.
Garnish with sour cream, tomato, avocado and lettuce.
