Mexican Lasagna
Mexican Lasagna is an moderately easy dinner. Made with 1 lb. ground beef, 1 (16 oz.) can whole tomatoes, cut up, 1 pkg. taco seasoning, 1 can french fried onions and 1 (16 oz.) carton cottage cheese, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Brown beef in skillet.
Drain.
Add canned tomatoes and taco seasoning; simmer 5 minutes.
Stir in 1/2 can fried onions.
In bowl, mix cottage cheese, 1 cup Cheddar cheese and eggs.
Place 3 tortillas on the bottom of a greased 8 x 12-inch baking dish. Overlap 6 tortillas on sides of dish.
Spoon mixture evenly in dish.
Top with 3 teaspoons chips, then cheese mixture.
Bake, covered at 350Β° for 45 minutes.
Sprinkle with remaining cheese. Put onions on top and bake 5 minutes.
When serving, arrange tomatoes and lettuce around the edges.
