Mexican Lasagna
Mexican Lasagna is an moderately easy dinner. Made with 1 1/2 lb. ground beef, browned and drained, 1 t. chili pepper, 1/4 t. red pepper, 1 can diced mexican-style tomatoes and 2 c. small curd cottage cheese, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Put together beef, spices, and tomatoes.
Heat through. Cover bottom and sides with tortillas in 9x13 pan.
Spread meat inside; top with tortillas. Mix cottage cheese, mexican cheese, and egg.
Pour over tortillas.
Bake at 350Β° for 30 minutes. Remove from oven.
Serve with salsa, sour cream, lettuce, tomatoes and onions.
