Mexican Lasagna
Mexican Lasagna is an moderately easy dinner. Made with 1 lb. ground beef, 1 c. salsa, 1 (15 oz.) can tomato sauce, 1 pkg. taco seasoning and 1 lb. cottage cheese, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Heat oven to 375Β°.
Brown meat and drain.
Stir in salsa sauce and seasoning.
Simmer and stir frequently for 5 minutes.
In separate bowl, mix cottage cheese, eggs and oregano.
Line bottom of lightly greased 13 x 9-inch baking pan with tortillas, overlapping edge.
Layer with 1/2 meat mix and 1/2 cheese mixture over meat.
Arrange remaining tortillas over top.
Then repeat layer of meat and cheese mix.
Spread with shredded cheese.
Bake 30 to 35 minutes or until bubbly.
Let stand 10 minutes before serving.
