Mexican Fudge
Mexican Fudge is an moderately easy dinner. Made with 1 lb. velveeta, 4 oz. sharp cheddar, grated, 4 oz. mild cheddar, grated, 4 oz. colby, grated and chopped jalapeño peppers to taste, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Grate all cheeses; mix in eggs (scrambled) and jalapeño peppers.
Bake in large Pyrex dish (sprayed with Pam) at 300° for approximately 40 to 45 minutes or until cheese begins to brown. Let cool about an hour before serving.
