Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 1 1/2 c. cornmeal, 2 tbsp. chopped bell pepper, 1 c. (small can) cream-style corn, 1 c. buttermilk and 2/3 c. salad oil, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Mix together everything, but the cheese.
Pour half of the mixture in a well-greased, hot skillet (iron pan is best). Sprinkle 1/2 cheese on top of this mixture.
Pour rest of combined mix on top of this and then sprinkle rest of cheese on top.
Bake at 350Β° for 35 to 40 minutes.
