Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 2 1/4 c. meal mix, 1/4 c. sugar, 1/2 c. egg substitute or 4 egg whites, 1/2 c. unsweetened applesauce and 1 (8 1/2 oz.) can creamed corn, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix in bowl the egg, applesauce, corn, peppers, onion, jalapeño peppers and sugar.
Add corn mix.
Stir just until blended (mixture will be thick).
Pour into hot greased iron skillet.
Bake at 375° in preheated oven for 45 to 55 minutes. Insert toothpick in center. Bread is done when toothpick comes out clean.
