Mexican Corn Bread
Mexican Corn Bread is an moderately easy dinner. Made with 1 c. yellow corn meal, 1 c. sweet milk, 1/2 tsp. soda, 3/4 tsp. salt and 2 eggs, well beaten, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Mix all together and set aside.
Cook 1 pound hamburger and 1 large onion (diced).
Drain well.
Grease large iron skillet and heat.
Sprinkle thin layer of corn meal in skillet.
Brown.
Pour 1/2 of batter in skillet.
Sprinkle 1/2 pound Cheddar cheese evenly over batter.
Add hamburger, onions and 2 or 3 jalapeño chopped peppers over cheese.
Pour remaining batter over cheese, hamburger, onions and peppers.
Bake at 350° for 45 to 50 minutes.
