Mexican Corn Bread
Mexican Corn Bread is an moderately easy dinner. Made with 2 eggs, 1 c. sour cream, 1 c. cream-style corn, 2/3 c. salad oil and 1 1/2 c. corn meal, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix all ingredients except cheese in order given.
Pour half of the mixture into hot, well-greased iron skillet.
Sprinkle half of the cheese over batter. Add remaining corn meal mixture and top with the rest of the cheese.
Bake at 350° for 1 hour.
Bread may be sliced and buttered, if so desired.
