Mexican Corn Bread
Mexican Corn Bread is an moderately easy dinner. Made with 1 c yellow cornmeal, 1 c all-purpose flour, 2 t sugar, 1 t baking powder and 1 t salt, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine the first 5 ingredients in a large bowl and set aside. In another bowl, combine buttermilk and egg; add corn and remaining ingredients.
Pour over dry ingredients and stir just until blended.
Do not overmix.
Pour batter into a greased 8 inch square pan.
Bake at 400 degrees for 35 minutes or until bread tests done. Cool 5 minutes before cutting.
Serve warm or cold.
