Mexican Corn Bread
Mexican Corn Bread is an moderately easy dinner. Made with 1 c. yellow cornmeal, 2 eggs, well beaten, 1 c. milk, 1/2 tsp. soda and 3/4 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Mix all these ingredients and set aside.
Brown 1 pound of ground meat in skillet and drain.
Grate 1/2 pound mild Cheddar cheese, 3 or 4 jalapeño peppers and 1 large onion (all finely chopped).
In large well-greased pan, pour half of cornbread mix, then your ground meat, then your cheese, onion and peppers.
Last, add your remaining cornbread mixture.
Bake at 400° for approximately 45 minutes.
