Mexican Corn Bread
Mexican Corn Bread is an moderately easy dinner. Made with 1 c. yellow corn meal, 1/4 c. sugar, 1 tsp. salt, 1 c. sifted flour and 3 tsp. baking powder, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Combine dry ingredients (corn meal, sugar, salt, flour and baking powder).
Add the egg, milk, salad oil, corn and cottage cheese; stir lightly.
Pour half of batter into a 9-inch square casserole (well-greased).
Add the cheese and peppers.
Pour rest of batter over this.
Bake at 425Β° for 30 to 40 minutes, until golden on top.
Serves 10 to 12.
