Mexican Chicken Manicotti
Mexican Chicken Manicotti is an moderately easy dinner. Made with 8 uncooked manicotti shells, 1 1/2 c. cooked chicken or turkey, cut up, or 1 1/2 c. cooked turkey burger, 1 c. shredded carrots, 1 c. nonfat cottage cheese and 2 tbsp. sliced green onion, this recipe delivers authentic, satisfying flavors. Cook manicotti as directed on package; drain.
Combine chicken, carrots, cottage cheese, onion, cilantro and garlic; stuff manicotti shells with chicken mixture.
Arrange in ungreased 13 x 9 x 2-inch pan.
Pour Ro-Tel over manicotti, then sprinkle with cheese.
Cover with foil and bake 35 minutes or until hot in center in 325Β° oven.
