Mexican Chicken Casserole is an moderately easy dinner. Made with 2 1/2 lb. chicken, boiled, diced and deboned, 1 onion, sauteed in oleo, 1 c. chicken broth, 1 can cream of mushroom soup and 1 can cream of chicken soup, this recipe delivers authentic, satisfying flavors. Mix the first 6 ingredients.
Put 6 tortillas in bottom of casserole. Cover with half of the chicken mixture and the cheese. Alternate again with 6 tortillas, chicken mixture and cheese. Bake 20 to 30 minutes at 325Β°.
