Mexican Chicken Casserole
Mexican Chicken Casserole is an moderately easy dinner. Made with 1 boiled chicken, meat picked from bones, 1 can ro-tel tomatoes, 1 can cream of chicken soup, 1 can cream of mushroom soup and 1/4 lb. velveeta cheese, diced or cubed, this recipe delivers authentic, satisfying flavors. Mix the tomatoes, soups, Velveeta cheese and onion.
Put a layer of chicken, a layer of chips and layer of the mixed ingredients.
Sprinkle with chili powder (optional).
Make two layers of each.
Top with crushed chips.

Cover loosely with foil to prevent chips from burning.
