Mexican Chicken Casserole
Mexican Chicken Casserole is an moderately easy dinner. Made with 4 chicken breasts, 1 large bag of dorito chips, 3/4 lb. shredded cheddar cheese, 1 onion chopped and 1 green pepper chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Boil chicken breasts and cut into large pieces.
Save stock. Saute green pepper and onion until tender. Add soup and tomatoes; mix.
Add chicken; thin with chicken stock if necessary.
Layer 9 x 13 inch baking pan with chips, soup mixture and cheese.
Repeat. Bake at 350Β° for 30 minutes.
