Mexican Chicken
Mexican Chicken is an moderately easy dinner. Made with 2 to 3 chickens, monterey jack cheese, longhorn cheese, 2 cans cream of mushroom soup and 2 cans cream of chicken soup, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Cut up chicken (if using a whole chicken).
Boil until done. Skin chicken.
Combine soups, broth, tomatoes and jalapeño peppers (diced) together.
Warm until smooth and remove from stove.
After sauce is ready, layer Doritos, chicken, onions, sauce and cheese. Cook in oven for about 20 minutes.
Do not overcook.
Use your judgment on cooking time.
You don't want it to be soupy or dry. Oven temperature should be around 325°.
