Mexican Chicken
Mexican Chicken is an moderately easy dinner. Made with 1 whole chicken or 3 large chicken breasts, 1 c. chicken broth, 1 can ro-tel, 1 can cream of chicken soup and 1 can cream of celery soup, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Boil chicken and debone it. Save 1 cup of broth.
Mix soups and Ro-Tel. In casserole dish, layer 1/2 bag crushed chips, 1/2 soup mixture, chicken, cheese and another layer of chips.
Bake at 350Β° for 45 minutes.
