Mexican Chicken
Mexican Chicken is an moderately easy dinner. Made with 5 chicken breasts, cooked, deboned and chunked, 1 lb. velveeta cheese, 1 can cream of chicken soup, 1 tbsp. chopped onion and 1 can ro-tel tomatoes, drained, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In a 9 x 13-inch baking dish, place 1/2 bag of taco chips in a layer.
Put a layer of chunked chicken over chips.
In a saucepan, melt the cheese, then add the soup, onion and Ro-Tel tomatoes. When mixture is done and mixed well, pour over taco chips and chunked chicken.
Sprinkle taco chips over top.
Bake until heated throughout at 350Β°.
