Mexican Chicken
Mexican Chicken is an moderately easy dinner. Made with 1 whole fryer chicken, cooked and deboned (save broth), 1 c. chopped onions, 1 c. bell peppers, chopped, 1/4 c. margarine and 2 cans cream of chicken soup, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Melt margarine in saucepan and saute onions and peppers until tender.
Add soups and broth and jalapeño pepper, if desired. Add chopped chicken.
In a 9 x
13-inch pan, spread 1/2 bag Doritos.
Spread half chicken and soup mixture on top of chips. Top with 1 cup of cheese.
Repeat layers. Bake at 425° for 25 to 30 minutes.
