Mexican Cheese Chili Dip

Cook onion in butter until tender, about 5 minutes. Stir in tomatoes, chilies, salt and pepper. Simmer, uncovered, 15 minutes. Cut cheese into 1/2-inch cubes. Stir in half and half when cheese begins to melt. Cook until cheese is melted. Cook, uncovered, 10 minutes. Serve in chafing dish with Fritos.
