Mexican Casserole
Mexican Casserole is an impressive dinner. Made with 1 lb. ground beef, 1 onion, chopped, 1 tsp. salt, 1/2 tsp. black pepper and 1 (16 oz. can tomatoes with juice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In a 10-inch skillet, saute beef and onion.
Add salt, pepper, bell pepper, seasoning mix, tomatoes, tomato sauce, beans, marjoram and bay leaf.
Let simmer for 30 minutes.
Remove bay leaf and pour into a 2-quart casserole.
Preheat oven to 350Β°. Sprinkle cheese over top.
Top with corn chips.
Bake for 20 minutes.
