Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 1 1/2 lb. ground beef, 8 flour tortillas, 1 (30 oz.) can chili hot beans, 12 slices american or cheddar cheese (may use cream of cheddar soup also) and 1 can chopped ro-tel tomatoes or mild to hot picante sauce, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Brown beef in skillet; drain grease.
Spray 9 x 13-inch casserole with vegetable spray.
Place layer of tortillas on bottom of pan.
Put a layer of ground beef over tortillas.
Put on layer of beans, then a layer of cheese.
Place another layer of tortillas on.
Repeat layers of meat, beans and cheese.
Next, spread Ro-Tel tomatoes or picante sauce over layers.
Spread cream of chicken soup next.
Top with another layer of cheese and a final layer of tortillas.
