Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 1 can cream of chicken soup, 1 can cream of mushroom soup, 1 can mild enchilada sauce, 1 can ro-tel tomatoes and chilies and 1 lb. velveeta cheese, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Brown hamburger and onions until tender.
Warm canned ingredients together in large Dutch oven, then add Velveeta cheese and cook until cheese is melted.
Add hamburger and onions; stir together.
Cut tortillas in pieces; place in large casserole dish, enough to cover bottom.
Layer with hamburger mixture.
Repeat layers until all is used.
Bake at 350Β° until warm through.
This makes a lot and freezes well.
