Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 2 lb. ground chuck, 1 large onion, pepper, garlic powder and cumin to taste, 1 pkg. chili seasoning and 2 cans pinto beans, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Brown ground chuck and large onion; drain.
Add pepper, garlic powder, cumin, chili seasoning and pinto beans; mix well.
Line a 9 x 13-inch pan with corn tortillas (torn into pieces).
Cover with 1/2 meat mixture and top with Velveeta cheese.
Add other 1/2 meat mixture; top with Velveeta cheese again.
Top with 1 can cream of mushroom soup mixed with Ro-Tel.
Cover with foil and bake at 350Β° for 30 to 45 minutes.
Serves 12 to 16 people.
