Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 3 tbsp. butter, melted, 3 c. corn chex cereal, 1 lb. ground beef, 2 tbsp. finely chopped onion and 1 tsp. chili powder, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine melted butter and Corn Chex; toss to coat well. Put 2 cups into 1 1/2 quart shallow baking dish.
Crush remaining Corn Chex; aside.
Skillet brown meat and onion; drain.
Add seasonings, in sauces.
Layer half the corn, meat mixture and cheese over Corn Chex in baking dish.
Repeat with remaining corn, meat and cheese.
Sprinkle reserved Corn Chex crumbs over top.
325Β° for 30 to 35 minutes, or until edges are bubbly.
