Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 1 1/2 to 2 lb. ground chuck, 1 (8 oz.) jar mild taco sauce, 1/2 lb. grated cheese, 1 pkg. martha white jalapeño corn bread mix and 1 (8 oz.) can tomato sauce, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Brown ground chuck and drain fat.
Stir in tomato sauce and taco sauce.
Spread mixture evenly in casserole dish.
Mix corn bread according to package directions, then add 1/2 of the French fried onion rings.
Spoon corn bread and onion batter over the beef and bake at 425° for about 20 minutes.
Remove from oven and top with grated cheese and the rest of the onion rings.
Put back into hot oven for 2 to 3 minutes to melt the cheese.
Serve hot.
