Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 2 c. crushed nacho chips, 1 tbsp. oil, 1 lb. ground beef, 1/4 c. chopped onions and 1 can diced tomatoes, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Saute onions in oil until done.
Cook ground beef and add to it.
Stir in taco seasoning, tomatoes, olives and chilies.
Simmer 10 minutes.
Preheat oven to 350Β°.
Put in a 9 x 13-inch baking dish. Spread 1 cup nacho chips on bottom of dish.
Spoon meat mix, sprinkle cheese over, spread sour cream over and sprinkle remaining chips. Bake 25 minutes. Sprinkle Cheddar cheese atop. Bake 5 minutes more. Take it out of the oven and pig out.
