Mexicalli Casserole
Mexicalli Casserole is an moderately easy dinner. Made with 1/2 c. chopped onion, 2 tbsp. margarine, 2 (15 oz.) chili with beans, 1 (17 oz.) whole kernel corn, drained and 1 (16 oz.) whole tomatoes, chopped and drained, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Heat oven to 350°.
Fry onions in margarine for 10 minutes. Add chili beans, corn and tomatoes; mix well.
Pour into 10 x 8-inch baking dish.
Prepare corn muffin dough according to package directions.
Stir cheese into dough.
Spoon dough around edges of baking dish.
Bake at 350°.
