Mechado
Mechado is an moderately easy dinner. Made with 1 lb. beef (lean), 4 big onions (whole), 1/2 c. vinegar, strips of pork fat and 1 can tomato sauce (small), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Insert fat strips, lengthwise, in beef.
In a deep pot or pan place the meat, laurel, tomato sauce, vinegar, salt to taste and water to cover.
Cover and simmer until tender.
Add potatoes, onions and pimientos and continue cooking.
When most of the broth has evaporated and potatoes are cooked, add the fat and stir well. Serve meat, sliced crosswise.
