Heat broth to simmer.
Mix beef, egg, salt, pepper and oregano.
Shape in 1 1/2-inch balls. Drop in broth.
Add onions, celery, carrots, cabbage, tomatoes, noodles, bay leaf, basil and parsley.
Simmer 35 minutes.
Stir occasionally.
Discard bay leaf.
Stir in soy sauce.
Makes 6 to 8 servings.
