Meal in One
Meal In One is an easy dinner. Made with 4 or 5 baking potatoes, sliced, 1 medium onion, sliced, salt and pepper, 1 lb. lean ground beef and 2 lb. cans tomatoes, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Place potato slices in layers in bottom of ungreased casserole dish.
Salt and pepper each layer.
Separate onion slices into rings.
Place on top of potatoes.
Arrange ground meat on top of onion slices.
Salt and pepper to taste.
Pour tomatoes and juice on top of meat layer.
Break up tomatoes.
Insert knife around edge of casserole to allow juice to run down inside.
Bake 1 hour in 425Β° oven.
Serves 4 or 5.
